Three people, three thirds of the same job

Concept and numbers. Kitchen and standards. Systems and data. A restaurant needs all three working, which is why none of us runs an engagement alone.

HU

Hamza Ukani

Founder & Restaurant Growth Consultant

Concept, menu economics, service standards, and the number that decides whether a restaurant survives its second year.

Hamza started CulinaPro after years of watching well-funded restaurants open beautifully and close quietly. The pattern was almost never the food. It was a lease signed before the maths, a kitchen designed around the seating plan, and a menu nobody had costed.

He leads concept work, feasibility and menu economics. On most engagements he is the one asking the uncomfortable question in the first meeting — what return do you actually need, and does this location support it?

He also owns the front-of-house side: service standards, floor training and review recovery, because a rating is service quality measured a week late.

What he owns: discovery, feasibility models, menu engineering, pricing, service standards and review recovery, and the client relationship from first call to handover.

Aakash Sharma

Co-Founder

Kitchen design, operations systems, and the kitchen training that makes them survive a bad night.

Aakash works where the plan meets the pass. Kitchen layout, station flow, equipment specification, SOPs and the production systems that decide whether a ticket takes nine minutes or nineteen.

He spends more time in kitchens during service than in meeting rooms, which is why CulinaPro’s layouts are drawn around the menu and the peak twenty minutes rather than around the leftover floor area. He also runs the kitchen-side training — a system only exists if the team can run it without him standing there.

What he owns: kitchen planning, equipment specification, SOP development, kitchen training and operational audits.

Taher Dodia

Co-Founder & Technology

Every system the restaurant runs on — POS, inventory software, delivery platforms, website and the numbers they produce.

A modern restaurant runs on software whether anyone planned it or not: a POS, an inventory app, three delivery dashboards, a reservation tool and a rating page. Taher makes those talk to each other and produce numbers the owner can act on.

He selects and sets up the POS and inventory stack, gets the data out of it in a form worth reading, manages the delivery platform back-ends, and builds the reporting that our monthly reviews run on. He also handles websites, Google Business Profile and online ordering for clients who need them.

What he owns: POS and inventory systems, delivery platform setup, reporting and dashboards, websites and online ordering, Google Business Profile.

How the three fit together

Hamza decides whether the business case holds and how the floor should feel. Aakash decides whether the kitchen can produce it, night after night. Taher makes sure the systems underneath — POS, inventory, delivery platforms — report what actually happened rather than what everyone assumed.

Most failed restaurants got two of those three right. That is the whole reason we work as a set.

Tell us what is not working. We will tell you what to fix first.
